Make your winter a little warmer: Tortellini Soup
As the winter months drag on, and snowflakes pile up outside, I constantly find myself craving soups. No, not your average can of tomato soup or minestrone, but something heartier, something to fill me up without the need for an extra bowl or a side of grilled cheese.
So it has been my mission to find an easy-to-make, dense soup. Something that allows warmth to spread from the tips of my fingers down to my toes after a long day of errands, something to think about and look forward to during a long workout. After pages and pages of food gawker searches, I finally stumbled upon the perfect recipe, with a combination of all the right ingredients.
This soup really hits the spot: between the kale, the spicy sausage, and the tortellini you can’t really go wrong. With the greens and veggies to boost your immune system, and the protein from the hearty sausage, you’ll be set to take on anything the winter weather throws your way.
Plus, its incredibly easy to make, most of the ingredients are super cheap at Trader Joe's and you’ll have enough leftovers to last you for days! So make your life a little easier this winter and whip up a batch– you won’t regret it!
Tortellini Soup Adapted from Full Measure of Happiness
Active Time: 20 min, Cook Time: 35-40 min, Serves 10
3 cloves of minced garlic
1 tablespoon of olive oil
1 bag of TJ’s frozen artichoke hearts
1 bag of frozen bell peppers from TJ’s
1 lb of hot Italian sausage (I just bought some of the TJ’s brand and minced them)
1 bag of frozen kale from TJ’s (the original recipe says to use fresh, but I wasn’t able to find any- if you can I highly suggest trying it)
1 lb spinach tortellini (*cook it during prep time, according to directions)
2 cans of diced, unsalted tomatoes
6 cups of low sodium chicken broth
2 teaspoons rosemary
2 bay leaves
salt, pepper and parmesan cheese to taste
First, heat the olive oil in a large pot over medium heat and sautee the onion and garlic until they begin to brown, about 2-3 minutes.
Add in the sausage until brown, about 2-3 minutes. Then toss in the peppers, artichoke hearts, rosemary and bay leaves, taking care to stir frequently. Let heat for about two minutes.
Next, add the kale and pour the tomatoes and broth over the top. If you used fresh kale, place a lid over the top and let it steam, to allow more room. Wait about 10 minutes or so, stirring occasionally.
Add the tortellini and season with salt and pepper to taste. Allow it to cook for about 20 minutes with the lid on. Once done, grate a little Parmesan cheese over the top for added flavor. Serve piping hot and enjoy the blissful experience of an easy, healthy meal.
